1 pizza base, 25 – 30cm in diameter
(see our recipe for a home-made pizza base)
1.5 tablespoons olive oil
1 tablespoon butter
1 teaspoon brown sugar
1/2 teaspoon balsamic vinegar
150g feta cheese, cut into small cubes
1 tablespoon chopped fresh sage
100g mozzarella cheese, grated
Salt and freshly ground black pepper
First caramelize the onions. Slice the onions into rings approximately 1cm wide.
Heat the butter and 1 tablespoon of olive oil in heavy-based frying pan.
Add the onions and sugar and slowly cook over a medium to low heat, stirring frequently.
Cook the onions until they are caramel colored, for about 45 minutes.
Add the vinegar once they have finished cooking, stirring with a wooden spoon to deglaze the pan.
Preheat the oven to 220 C. Brush the pizza base with the rest of the olive oil. Distribute the caramelized onions over the base then arrange the feta cheese cubes on top.
Sprinkle the mozzarella cheese and the chopped sage over the pizza. Season generously with freshly ground black pepper, then bake for about 15 – 20 minutes until the edges of the crust are golden.
