Fresh Herb Pizza

Serves 4
This simple pizza topping combines some key flavors to create a delicious and satisfying vegetarian pizza that is very quick and easy to prepare. See our section on using fresh herbs for suggestions on other herbs to use.

2 cups mixed herbs: basil, parsley, oregano
(other herbs may be used instead or in addition to these)
3 cloves garlic, finely chopped
1/2 cup double cream
1 pizza base, 25 – 30cm in diameter

1 tablespoon olive oil
1/2 cup of grated parmesan cheese
salt and pepper to taste

Preheat the oven to 220 C. Finely chop the herbs or use a food processor. Combine the mixed herbs with the garlic and cream in a bowl and mix well. Brush the pizza base with the olive oil and then spread over the herb mixture.

Sprinkle over the grated parmesan then bake for about 15 – 20 minutes or until the edges of the base are golden. The topping should still be moist.

Serve immediately and enjoy.
