Margherita Pizza

Serves 4

1 pizza base, 25 – 30cm in diameter (see our recipe for a homemade pizza base)
4 tablespoons tomato passata (sieved tomatoes or tomato puree)
1/2 garlic clove, finely chopped
1 tablespoon fresh basil leaves, torn into pieces plus small leaves to garnish
2 small mozzarella cheeses (about the size of an egg) sliced 1cm thick
1 tablespoon grated parmesan
6 cherry tomatoes, halved
Extra virgin olive oil, to drizzle

Preheat the oven to 220 C. Combine the passata with the garlic, then spread over the pizza base. Scatter the torn basil leaves over the passata. Arrange the mozzarella slices over the top, then scatter with parmesan and cherry tomatoes.
Drizzle with olive oil and bake for 15 – 20 minutes or until the cheese has melted and the pizza base is crisp and lightly golden around the edges.

Drizzle the pizza with a little more olive oil, garnish with the small basil leaves then serve immediately.
