1 pizza base, 25 – 30cm in diameter
(see our recipe for a home-made pizza base)
1 1/2 tablespoons olive tapenade
1 cup chopped fresh rocket
1 red pepper, seeds removed and thinly sliced
10 -12 black olives, halved lengthways
150g mozzarella cheese, grated
Salt and freshly ground black pepper
Preheat the oven to 220 C. Spread the olive tapenade evenly over the pizza base and then scatter the chopped rocket over the top.
Arrange the red pepper slices over the rocket. Sprinkle the mozzarella cheese over the pizza then arrange the olives on top. Season generously with freshly ground black pepper, then bake for about 15 – 20 minutes or until the edges of the crust are golden.
