1 pizza base, 25 – 30cm in diameter

1 tablespoons olive oil
1/4 cup fresh basil leaves, chopped roughly
(plus a handful of extra basil leaves for garnishing)
1/2 cup semi-dried tomatoes, each cut in half
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
salt and pepper
Preheat oven to 220 C. Place base on a lightly oiled baking tray and brush with 1 tablespoon of olive oil.
Scatter the chopped fresh basil over the base. Distribute the semi-dried tomatoes over the basil, then dollop on the ricotta cheese. Sprinkle with Parmesan then season with salt and freshly ground black pepper.
Bake the pizza until the edge of the base is slightly browned, about 15 – 20 minutes.
Sprinkle the pizza with a handful of extra basil leaves to garnish.
Serve and enjoy!
