Sweet Potato and Rosemary Pizza

Serves 4
This is a delicious and satisfying vegetarian pizza. The sweet potato and garlic combine well with the distinctive flavor of fresh rosemary.

1 pizza base, 25 – 30cm in diameter
(see our recipe for home-made pizza dough)
350g sweet potatoes, thinly sliced
3 tablespoons olive oil
2 cloves garlic, finely chopped
1 red onion, sliced thinly
150g mozzarella cheese
(smoked mozzarella is a tasty alternative)
2 teaspoons fresh rosemary, finely chopped
salt and pepper to taste
2 tablespoons grated Parmesan cheese

Preheat the oven to 220 C. Steam the sliced sweet potatoes until they are just tender then cool under cold running water and drain. Heat 2 tablespoons of oil in a frying pan and then add the sliced sweet potatoes and chopped garlic. Fry on a medium-high heat for about 5 minutes then add salt to taste.

Brush the pizza base with the rest of the olive oil. Distribute the red onion slices over the base, then arrange the sweet potato slices on top.

Sprinkle the mozzarella cheese and the chopped rosemary over the pizza. Season generously with freshly ground black pepper and a little salt, then bake for about 15 – 20 minutes until the edges of the crust are golden. Sprinkle over the grated parmesan cheese.
