4 x mini pizza bases 11-13 cm in diameter
(see our recipe for a basic pizza base)
3 tablespoons olive oil
3 cups wild mushrooms, sliced
2 shallots, chopped
2 garlic cloves, chopped finely
2 tablespoons chopped thyme and parsley
1/3 cup grated Gruyere cheese
2 tablespoons grated Parmesan cheese
salt and black pepper
Preheat the oven to 220 C. Heat 2 tablespoons of olive oil in a frying pan. Fry the mushrooms, shallots and garlic for about 10 minutes or until all the juices have evaporated. Add half the chopped thyme and parsley and season with salt and pepper. Brush the pizza bases with the remaining olive oil then spoon over the mushroom, shallot and garlic mixture. Sprinkle the Gruyere and Parmesan cheeses on top.
Bake for 15 – 20 minutes until the edges of the base are golden. Garnish with the remaining fresh herbs, then serve and enjoy!
